INGREDIENTS
½ cup flour
2 tablespoons sugar
2 tablespoons butter
1 medium egg
Pinch of salt
¼ cup milk
½ teaspoon baking powder
¼ teaspoon vanilla essence
Decorations:
White icing sugar
12 mini smarties for the Easter bunny eyes
6 marshmallows for the Easter bunny ears
Decorations for the nose and whiskers

Large bowl
Measuring cups
Measuring spoons
Sieve
Wooden spoon
Cupcake baking tray
Cupcake liners
Oven: 180 Deg

METHOD
Pre-heat the oven to 180 degrees.
In a large bowl, sieve your flour then add your sugar.
Put butter into your mixing bowl, then pinch and rub together using your finger tips until it’s nice and fine like breadcrumbs.
Break an egg into the same bowl and mix until your mixture is smooth.
Pour milk and mix again. Mix well until smooth and no lumps.
Add the vanilla essence (or cocoa if you prefer choc flavor! 1 Tablespoon)
Add salt & baking powder into the mixture and then mix it all together really well.
Mixture should be runny and as smooth as possible.
Spoon mixture into cupcake tray with cupcake liners. Fill ¾ full because they will grow in the oven.
Bake for 7 – 12 min until golden brown. Leave to cool, then ice with white icing.
Now its time to make the Easter bunnies!
Cut the marshmallows diagonally so you have 12 pieces for the ears, dunk the sticky side into pink sprinkles and put on your cupcakes.
Add your eyes, nose and any other decorations to make your delicious Easter bunnies.
